The Woike Family’s Classic Avocado Toast

Jen Woike, from Running W Egg Farm on the Island shares this family favourite. It’s an easy, delicious breakfast or brunch and perfect for a winter morning with the family. Enjoy!


  • 1 small ripe avocado
  • Salt and pepper to taste
  • Juice from 1 small lime
  • 2-4 slices of toast, bagel, English muffin, etc.
  • 2-4 BC Eggs
  • Tajine spice
  • Cilantro, chopped


  1. Peel and pit 1 avocado. In a small bowl, mash avocado using a fork or a potato masher to your desired consistency – as smooth or chunky as you like! Season with salt and pepper.
  2. Juice lime and add juice to avocado. Mix well.
  3. Spread onto toast, bagel, English muffin or other base of your choice.
  4. Cook BC eggs as you like – poached, fried, soft boiled or even scrambled!  Soft poached is the Woike family’s favourite.
  5. Sprinkle with fresh chopped cilantro and tajin spice and serve.
