Lovella’s Cinnamon Sugar Popovers

Tis the season for baking and indulgences, and you can have both with Lovella’s Cinnamon Sugar Popovers. Lovella’s an egg farmer from Abbotsford and she works magic in the kitchen! We’re so glad she shared a bit of that Holiday Magic with this recipe.

Ingredients

Popovers

  • 2 eggs
  • 1 cup milk
  • 1 cup flour, sifted
  • 1/2 tsp salt
  • 1 tbsp butter, melted
  • 12 tsp vegetable oil
  • 2 tbsp warm tap water (add this when you beat it one last time before pouring into pan, see instruction #8)
  • cooking spray,  or vegetable oil

Cinnamon Sugar Coating

  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter

Instructions

Popovers

  1. Beat together eggs and milk until frothy.
  2. Add sifted flour and salt. Mix well.
  3. Add melted butter and mix for at least 3 minutes.
  4. Allow this mixture to rest on the counter for at least 2 hours.
  5. When ready to bake, preheat the oven to 450º.
  6. Spray pan lightly all over with cooking spray. Lightly coating the whole top of the pan and the cups ensures nothing sticks.
  7. Add 1 tsp vegetable oil to each popover cup.
  8. While the oven is heating, add the 2 tbsp warm tap water to the batter, and once again beat your mixture really well for about 3-5 minutes.
  9. Once the oven is up to temperature place the pan with hot fat in the oven until it begins to sizzle. Be careful to watch it to prevent the fat from smoking.
  10. Being careful remove hot pan with sizzling fat from the oven and quickly pour the batter into cups of pan dividing it as equally as you can.
  11. Immediately set back into the oven. Bake at 450º for 15 minutes. It’s important to set the time for only 15 minutes. DO NOT OPEN OVEN DOOR DURING ANY PART OF COOKING.
  12. Leaving door shut and pan in oven, turn oven down to 350º and set timer for 20 minutes. Looking through the oven window you should see them rising high (do NOT open the oven to peek!).
  13. When the baking timer goes off turn off the oven, open the oven door, and leave it slightly open for 5 minutes. This really helps to set them and keep the rise and crispness on the outside.
  14. Remove from oven and let cool.

Cinnamon Sugar Coating

  1. While the popovers are baking, mix together 1/2 cup sugar and 1 teaspoon of cinnamon in a large bowl.
  2. Once the popovers are cool enough to handle, brush them lightly with melted butter and place them one at a time in the bowl, rolling them in the sugar-cinnamon mixture until coated.  Remove to a rack to cool or eat immediately.
