Classsic or Curried Egg Salad Sandwich

Egg salad sandwiches are a classic – but have you tried spicing it up with a hit of curry? Classic or curried, we think you just can’t go wrong with eggs!

Ingredients

Classic Egg Salad

  • 2 tbsp (30 mL) mayonnaise
  • 1 tsp (5 mL) dijon mustard
  • 1/4 tsp (1.5 mL) salt, or to taste
  • 2 tbsp (30 ml) green onion, finely chopped
  • 3 hard-boiled eggs, cubed
  • 4 slices of bread (see note)
  • 2 romaine lettuce leaves

Curried Egg Salad

  • 3 tbsp (45 mL) mayonnaise
  • 1 tsp (5 mL) curry powder
  • 1/4 tsp (1.5 mL) salt, or to taste
  • 2 tbsp (30 ml) green chillies, finely chopped (see note)
  • 3 hard-boiled eggs, cubed
  • 4 slices of bread (see note)
  • 2 romaine lettuce leaves

Instructions

Choose your filling – classic or curried. The method is the same for either sandwich!

  1. In a medium sized bowl, combine mayonnaise, seasonings, chilies or onions, and mix together. Gently fold in hard cooked eggs and stir till combined.
  2. Arrange two slices of bread on a plate. Butter each slice, or not, as you choose. You can also spread with additional mayo if you like.  Top each slice with 1/2 the egg mixture, lettuce, and the remaining slice of bread.
  3. Enjoy!

Notes

To get perfectly firm hard cooked eggs: 

  • Place eggs in a single layer in a saucepan. Add enough cold water to cover the eggs by at least 1 inch (2.5 cm). Cover and bring to a boil.
  • Once boiling, remove the saucepan from the heat and keep covered. Let eggs stand in the hot water for 15 minutes, then transfer to an ice bath or cold water to stop the cooking.

Chilies in the Curry

Choose your chili based on how hot you’d like your curry. For a milder curry, remember to remove seeds and membranes.

 

Bread

Any bread will do for an egg salad sandwich, but we recommend trying a soft, fluffy white bread, whole wheat, or a rich multigrain. For a curried egg salad sandwich, try Challah bread – it’s a bit sweeter and goes wonderfully with the warm spices!
