This “Farmer Favourite” recipe is from BC Egg farmer Jeff Regier. Jeff especially loves to make these when camping, but it’s a morning favourite in any season!
Ingredients
2 eggs
Toasted English muffin
Havarti
Sliced ham – lightly fried
Spicy Mayo
Guacamole
Instructions
Toast English muffin and spread one side with guacamole and the other with spicy mayo.
Fry two eggs, breaking the yolks once they’re in the pan, until set. While they’re cooking, lightly fry the ham as well.
When egg is almost ready, top with Havarti and let the cheese melt slightly.
Layer prepared English muffin with ham, then the egg and cheese. Top with second half of the English muffin and enjoy!
