Poke-A-Hole Sandwich

Ingredients

  • 2 slices bread
  • 1 Tbsp (15 ml) butter, salted and softened
  • 3 Tbsp (45 ml) Cheddar cheese, grated
  • 2 Tbsp (30 ml) Gouda cheese, grated
  • 2 Tbsp (30 ml) Havarti cheese, grated
  • 1 egg

Instructions

  1. Spread ½ Tbsp of butter on one side of each slice of bread.
  2. On the unbuttered side of one slice of bread, place 2 Tbsp of the Cheddar and all of the Gouda and Havarti cheese. Top with the second slice of bread, with the butter on the outside.
  3. Using a 2” round cutter, cut a hole in the middle of the sandwich.
  4. Heat a non stick pan over medium heat.
  5. Add the sandwich and the cut-out centre to the pan.
  6. In the hole, place ½ Tbsp grated cheddar to the pan.
  7. When the cheese in the centre starts to bubble, add the BC egg.
  8. Cover with a lid until bread is golden brown and ready to flip.
  9. Carefully flip the sandwich and the centre and cook until golden brown.
  10. Serve immediately. The egg yolk should still be runny.
