Guacamole Deviled Eggs

Add some fiesta flare to your deviled eggs! Avocado replaces the traditional mayonnaise without sacrificing creaminess in these Mexican inspired appetizers.

Ingredients

  • 8-10 large BC eggs, hard boiled (10-12 minutes)
  • 2 medium avocado, about 5 oz
  • t tbsp fresh lime juice
  • 1 /4 cup diced tomato
  • 1/4 cup green onion, minced
  • 1 tbsp fresh cilantro, chopped
  • 1/2 tsp garlic powder (or fresh garlic, minced or crushed)
  • salt and fresh ground pepper, to taste
  • pinch chile powder, for garnish
  • nacho chips, for garnish

Instructions

  1. Boil eggs (10-12 minutes) then let set (8-10 minutes). Gently drop the eggs into a bowl of ice water.

  2. Crack and peel the eggs, then halve them lengthwise. Remove yolks and put them into mixing bowl, reserving the whites.
  3. Add avocado, lime juice, salt and pepper, diced tomato, chopped onions, cilantro, and garlic powder, mix well.
  4. Spoon mixture into egg halves, add nacho chip and a sprinkle of chili powder for garnish if desired.
