Egg Frames with Fried Tomatoes

Ingredients

Eggs Frames

  • 2 pieces of white bread
  • 2 eggs
  • Butter
  • Salt and pepper

Fried Tomatoes

  • 1 tomato
  • 1/2 cup flour
  • Butter
  • Salt and pepper

Instructions

Eggs Frames

  1. Cut an egg-sized hole out of the centre of each slice of bread and butter both sides liberally.
  2. Melt butter in a pan over medium heat and add the slices of bread. Pan fry for 2-3 minutes until one side is golden brown. Flip both pieces of bread and immediately crack an egg into the hole in the bread.
  3. Fry another 2-3 minutes until the bottom of the egg is cooked through. Flip the egg frames again and cook until the yolk is done to your satisfaction (15-20 seconds for a soft yolk, longer for a hard yolk).
  4. Season with salt and pepper to taste, serve immediately.

Fried Tomatoes

  1. Place the flour on a plate and season with salt and pepper.
  2. Slice the tomatoes and dip each slice in the flour mixture being sure to coat both sides.
  3. Melt butter in a pan over medium/high heat and add the tomato slices.
  4. Fry for 3-4 minutes per side until you get a golden crust.
  5. Best served hot from the pan.
