This red lentil coconut curry is rich, spicy and satisfying. You can enjoy it with or without roti and while we’ve included a recipe here, store-bought roti works just as well.
NOTE: To enjoy this recipe gluten free, just omit the roti. To enjoy this recipe dairy free, be sure to use oil rather than ghee.
Notes
Curry Paste – This recipe was developed using Blue Dragon red curry paste. If using another brand (e.g. Thai Kitchen) that is thicker and more concentrated, use 1 to 1 ½ tablespoons (15 to 22 mL).
