Chocolate Chip Cookies Without The Gluten

With loads of chocolate chips and both coconut and toasted nuts, these cookies are everything you want from a chocolate chip cookie – but with out any gluten! If you’d prefer a more traditional, “gluten-full” cookie you can swap in flour for the gluten-free mix.

Ingredients

  • 250 gm butter, softened
  • 1 cup (250 ml) brown sugar
  • 1 egg
  • 2 cups (500 ml) gluten-free baking cup-for-cup substitute such as Cloud 9
  • 1 ¼ tsp (6 ml) baking powder
  • 45 gm desiccated coconut
  • 220 gm chocolate chips
  • 185 gm toasted chopped nuts such as hazelnuts, walnuts, pecans

Instructions

  1. Preheat oven to 350 degrees.
  2. Beat butter and sugar in a bowl until light and fluffy. Beat in egg.
  3. Add sifted gluten-free baking substitute, baking powder, coconut, chocolate chips and nuts to butter mixture and stir to combine.
  4. Drop tablespoons of mixture onto baking trays lined with parchment paper.
  5. Bake for 12-15 minutes or until cookies are golden. Transfer to a wire rack to cool
