With loads of chocolate chips and both coconut and toasted nuts, these cookies are everything you want from a chocolate chip cookie – but with out any gluten! If you’d prefer a more traditional, “gluten-full” cookie you can swap in flour for the gluten-free mix.
Instructions
- Preheat oven to 350 degrees.
- Beat butter and sugar in a bowl until light and fluffy. Beat in egg.
- Add sifted gluten-free baking substitute, baking powder, coconut, chocolate chips and nuts to butter mixture and stir to combine.
- Drop tablespoons of mixture onto baking trays lined with parchment paper.
- Bake for 12-15 minutes or until cookies are golden. Transfer to a wire rack to cool
Makes about 3 dozen cookies
